Using the thermometer

The front thermometer is ideal for flameless cooking because it detects the temperature of the air inside the oven, for cooking pizza the laser thermometer is recommended to measure the temperature of the hob.
Note: When the door is opened, the temperature shown on the front thermometer seems to decrease because the thermometer detects the outside temperature of the oven, whereas internally the temperature always remains high. In fact, as soon as the door is closed again, the thermometer rises quickly.

Make a moderate first heating about 1h30min about 200C (400F) to dry the floor

When you receive the oven in winter time
Get a propane gas cylinder or one with a high % propane, this type of gas performs best when using the oven in winter at temperatures below 10°C and allows for optimal operation and better efficiency. (Butane at low temperatures does not have excellent efficiency and has combustion difficulties, also causing an increase in consumption)

How to use oven to cook neapolitan pizzas
Heat the oven at maximum heat for 40-45 minutes (+10min if using the Saputo biscotto)
In winter, we recommend extending the heating by 10 minutes on particularly cold days.
After heating the oven, our most experienced customers recommend keeping the knob at about 3/4 and then proceed with cooking your pizzas at a temperature of about 400-430c (750-850F)
How to manage the cooking of classic pizza with the refractory hob:
Heat the oven at maximum heat for 30-35 minutes (+10 minutes if using the Saputo biscotto)
In winter, we recommend extending the heating by 10 minutes on particularly cold days.
After heating the oven, our most experienced customers recommend keeping the knob at about halfway between high and low flame, and then proceed with cooking your pizzas at around 300c (600F)
If you want to cook two pizzas at the same time and avoid having to change positions of your pizzas during cooking, bake on the right first as in this video. We recommend cooking one pizza at a time for the first few uses, to get to know the oven and its features.
Note: if the hob temperature is 400c (750F) the cooking chamber will be around +100c (+200F)
